Summer Shrimp Spaghetti

Ingredients

  • 1 lb spaghetti noodles
  • 2 tbsp butter
  • 1/4 cup avocado oil
  • 1 pkg (12 oz) raw shrimp
  • 2 tbsp garlic powder, divided
  • 1 tsp smoked paprika
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 1 tsp onion powder
  • 1 cup frozen or fresh spinach
  • Bread, for serving

Directions

  1. Cook spaghetti noodles according to package instructions.
  2. In a skillet over medium heat, add butter, avocado oil, and shrimp. Mix in 1 tbsp garlic powder and the paprika. Cook until shrimp just turn pink; remove and set aside.
  3. Add chicken broth, Parmesan, heavy cream, remaining garlic powder, onion powder, and spinach to the skillet; stir well.
  4. Return shrimp to the skillet to finish cooking. Toss in noodles and serve. (Garnish with fresh basil or parsley, if desired.)
