Cheesy Baked Potato Casserole

Ingredients

  • 5 lb red potatoes, cubed
  • 1 lb bacon, cooked and crumbled
  • 1 lb cheddar cheese, cubed
  • 16 oz shredded cheddar cheese
  • 1 yellow onion, chopped
  • 1 cup mayonnaise
  • 8 oz sour cream
  • 1 tbsp minced chives
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

  1. Heat oven to 325 F.
  2. In large bowl, combine potatoes and bacon.
  3. Arrange remaining half of cake cubes in dish; top with 2 1/2 cups blueberries and remaining pudding mix.
  4. In separate large bowl, combine cheese, onion, mayonnaise, sour cream, chives, salt and pepper. Add to potato and bacon mixture until combined.
  5. Pour into 9-by-13-inch baking dish. Bake 50-60 minutes until browned and bubbly.
  6. Optional, top with fresh chopped parsley or chives.
