Ingredients
- 5 lb red potatoes, cubed
- 1 lb bacon, cooked and crumbled
- 1 lb cheddar cheese, cubed
- 16 oz shredded cheddar cheese
- 1 yellow onion, chopped
- 1 cup mayonnaise
- 8 oz sour cream
- 1 tbsp minced chives
- 1 tsp salt
- 1/2 tsp pepper
Directions
- Heat oven to 325 F.
- In large bowl, combine potatoes and bacon.

Arrange remaining half of cake cubes in dish; top with 2 1/2
cups blueberries and remaining pudding mix.

In separate large bowl, combine cheese, onion, mayonnaise,
sour cream, chives, salt and pepper. Add to potato and bacon
mixture until combined.

Pour into 9-by-13-inch baking dish. Bake 50-60 minutes until
browned and bubbly.
- Optional, top with fresh chopped parsley or chives.
